Shoofly Pie I

This pie whips up in a wink, but it tastes like you 've been in the kitchen for hours. A brown sugar crumble is stirred into the molasses and egg filling, and then it 's sprinkled on top of the pie before it 's baked. The result is a gooey, not-to-sweet, delicious pie that begs to be topped with scoops of vanilla ice cream.

In a small bowl, mix flour, brown sugar, and butter or margarine together until it resembles course corn meal. Measure out 1/2 cup, and set aside for topping. In a separate bowl, beat the egg....

  • 1 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 2 tablespoons butter
  • 1 cup molasses
  • 1 egg
  • 3/4 cup cold water
  • 1 teaspoon baking soda
  • 1/4 cup boiling water
  • 1 recipe pastry for a 9 inch single crust pie
