  • 2 cups white distilled vinegar
  • 3 tablespoons sugar

  • 1 large yellow onion, 1/4-inch dice (about 2 cups)
  • 1 heaping tablespoon peeled and finely grated ginger
  • 8 cloves garlic, minced
  • 2/3 cup chicken stock
  • 1/2 cup fish sauce
  • 1/2 cup hoisin sauce
  • 1/2 teaspoon ground black pepper
  • 2 pounds ground pork
