Pat's Mushroom Saute
Mushrooms sauteed in butter, balsamic vinegar, garlic and oregano. This recipe calls for button mushrooms, but it would be great with any mushroom.
Melt butter with oil in a large skillet over medium heat. Stir in balsamic vinegar, garlic, oregano, and mushrooms. Saute for 20 to 30 minutes, or until tender.

- 1 clove garlic, minced
- 1/8 teaspoon dried oregano

In a large saute pan on high heat, coat well with oil and add alligator. Season and quickly brown meat, 2 to 3 minutes. Remove and set aside on paper towels.
