Waterzooi (Vaterzoy)

A whole fryer chicken is cut up and slowly simmered with leeks, onions, celery, nutmeg, lemon juice and egg yolks.

  • 2 tablespoons vegetable oil
  • 2 pounds fryer or boiler chicken, cut into pieces
  • 2 leeks, sliced
  • 1 large onion, diced
  • 2 stalks celery, sliced
  • 1 1/2 teaspoons salt
  • 5 cups water
  • 1 teaspoon chicken bouillon granules
  • 1/4 teaspoon nutmeg
  • 1 tablespoon all-purpose flour
  • 1 tablespoon lemon juice
  • 1/2 cup heavy cream
  • 2 egg yolks
  • 1 tablespoon dried parsley
