Jicama Salad with Cilantro and Lime

A crisp and refreshing jicama salad for summer or anytime, this salad goes really well with a Mexican-style dish.

Combine the julienned jicama, chopped cilantro, and salt and pepper in a large bowl. Sprinkle with lime juice and toss to coat. Refrigerate until ready to serve.

  • 2 pounds jicama, peeled and julienned
  • 1/4 cup chopped cilantro leaves
  • salt and pepper to taste
  • 1/4 cup lime juice
