This balsamic watermelon chicken salad recipe combines balsamic glaze, herbed chicken, almonds, watermelon and blue cheese to make a fresh and simple salad with great taste. This watermelon chicken recipe can be made within 40 minutes and a yield of four servings can be prepared as well.
1) First of all, you have to take a small saucepan.
2) Balsamic vinegar should be poured into the saucepan.
3) It needs to be brought to a boil.
4) Now, the heat has to be reduced and simmered for a period of 15-20 minutes. (You have to keep on simmering until the vinegar is reduced considerably and it must also become syrupy)
5) The next step is the process of turning a nonstick or grill to high heat.
6) The seasoning should be sprinkled over the chicken on both sides.
7) Olive oil has to be drizzled in.
8) It has to be transferred to the hot grill.
9) The chicken must be cooked for 5 minutes and you can stop when there is no pink on the inside and the outside part becomes browned nicely.
10) Set aside for 5 minutes before cutting into tiny cubes.
11) The spinach needs to be layered with almonds, blue cheese, watermelon and chicken.
12) Balsamic reduction has to be drizzled to taste.
13) If you want, you can top with extra olive oil.
Ingredients
- Almonds – 1/4 cup (It can be crushed or sliced)
- Balsamic vinegar - 1 cup.
- Blue cheese crumbles – 1/2 cup.
- Watermelon cubes – 2 cups.
- Chicken breasts - 1 lb. (They need to be boneless and skinless)
- Greens or baby spinach – 4 cups.
- Olive oil – 1 tablespoon.
- All purpose seasoning - 3 teaspoons. (A spice mix bought from a specialty can be used)
