Take small bowl and chives, capers, relish, mayonnaise and lemon juice must be mixed in the bowl.
It should be seasoned using salt.
You have to refrigerate it.
Fried catfish
First of all, a large wide pot must be taken or a deep cast iron skillet has to be taken.
It should be filled with 3/4 inch of vegetable oil.
The heat needs to be kept at 350 Degrees Fahrenheit. (Over medium high heat)
The next step is to preheat the oven to 200 Degrees Fahrenheit
A rack has to be placed in a baking sheet.
The fillets should be washed and pat dried.
The lemon juice needs to be squeezed over both sides.
Pepper and salt should be sprinkled on both sides.
Then, you must pour the milk into a pie plate or shallow bowl.
The eggs need to be added and whisked to combine.
Take another shallow bowl and fish fry breading must be placed into it.
The fillets need to be dipped in the milk and egg mixture and you should allow the excess to drip off. (It should be done in batches).
The fish must be dredged in the fish fry to form an even coating.
The next step is to add the fillets to the oil and they should be fried for 5 to 7 minutes. (You have to turn it once and also make sure that they are cooked through and turned golden brown on both sides.
Now, they have to be placed on the rack and keep them warm in the oven while the remaining fillets are dredged and fried.
You can serve this dish immediately with lemon wedges, hot sauce and tartar sauce.

- Lemon juice – take from a 1/2 lemon.
- Fresh chives – 1 tablespoon. (it must be chopped).
- Mayonnaise – 3/4 cup.
- Kosher salt – to taste.
- Pickle relish – 1/4 cup.

- Vegetable oil – for frying purposes.
- Large eggs – 3 nos.
- Whiting fillets – 6 nos. (6 to 9 ounce)
- Fish fry breading - 2 cups.
- Lemon – 2 nos.
- Lemon wedges – for serving purposes.
- Hot sauce – for serving purposes. (You can use Frank’s Red Hot).
- Salt – to taste.
- Black pepper – to taste. (It should be freshly ground)
