Hearty pasta soup
Hearty Pasta soup can be certainly described as a healthy and delicious dish and, it is an ideal option for lunch or supper as well. It contains the much needed fiber, low fat and full of healthy vegetables and, you can prepare it with utmost ease and comfort as well. This dish does not make you a fat person and the taste takes you into a different world altogether. The ever rising popularity of this dish reasserts this conclusion without a shadow of doubt as well. The cooking process can be described as extremely simple and you do not have to spend large amount of money as well. You just need 8 ingredients to prepare this wonderful dish and basil leaves can be used if you are interested. It is an optional thing and you can decide based on your unique taste preferences and concepts.
First of all, the oil needs to be heated in a pan.
Fry the carrots and onion in the hot oil for 5 minutes and you have to make sure that they start getting softened.
Then, you have to add the vegetable stock.
The next step is to add the tomatoes.
Simmer for 5 minutes.
Now, the peas and beans need to be added.
Simmer for 5 more minutes.
When the vegetables become tender, you can stir in the pasta.
Return to the boil and simmer for 2 minutes until the pasta is just cooked.
Then, the basil leaves need to be stirred in. It is optional and if you do not want, there is no need to add the basil leaves.
Season to taste.
The dish is ready to serve.
It can be served in bowls topped with a sprinkling of Parmesan.
You can also sprinkle slices of garlic bread.
- Olive oil – 1 tablespoon
- Finely chopped large onion – 1 no.
- Chopped carrot – 2 nos.
- Can chopped tomato – 400 grams.
- Vegetable stock – 1 l
- Fresh filled tortellini – 25 gram pack. (We used ricotta and spinach)
- Frozen mixed pea and beans – 200 grams.
- Grated Parmesan (or vegetarian alternative) - to serve.
- Basil leaves (Optional) – handful.
