Herby Lentil Salad With Avocado and Feta

This herby lentil salad with avocado and feta recipe discusses a simple method of making a yummy salad with lentils and avocado and you can satisfy your stomach and taste buds without any bread or meat. 1) The lentils should be cooked based on the package directions.
2) As the lentils are being cooked, herbs, red onion, avocados, radishes and cucumbers have to be sliced or chopped
3) The feta needs to be crumbled.
4) You must take a large mixing bowl.
5) Lime juice, honey, vinegar and soy sauce should be whisked together in the bowl.
6) You have to keep on whisking in a constant way and the stream in the olive oil must be slowed until the dressing gets thickened and emulsified.
7) Pepper and salt have to be used for seasoning to taste.
8) The lentils have to be drained well and they need to be tossed in the dressing. (You have to toss while keeping them warm)
9) Other ingredients have to be tossed into the lentils in a gentle way.
10) You have to reserve the feta cheese and herbs for garnishing purposes.

- Green lentils – 2 cups. (Rinsed)
- Cucumber - 1 cup. (Thinly sliced)
- Fresh parsley (Chopped) – 1/2 cup.
- Thinly sliced radishes – 1 cup.
- Dried cherries – 1/2 cup. (You can use cranberries instead)
- Red Onion (Finely chopped) – 1/4 cup.
- Avocado – 1 no. (It must be sliced or cubed)

- Soy sauce - 1 tablespoon.
- Rice wine vinegar - 1 tablespoon.
- Lime juice – Taken from one lemon.
- Salt – to taste.
- Pepper – To taste.
- Extra virgin olive oil – 1/4 cup.
- Honey - 2 teaspoons.
