Hot cross bread & lemon pudding

Pudding has always been a favorite food among a large group of people all around the world. This hot cross bread and lemon pudding recipe helps you prepare a delicious Sunday pudding and it can be described as the ideal way to combine the flavors of a real bread and butter pudding in an easy manner. The preparation time for this hot cross bread and lemon pudding is 20 minutes and the cooking time comes around 40 minutes. First of all, you need to butter a one-liter baking dish. (You need to make sure that the dish closely fits the buns).
Each bun should be cut into 3 slices.
Then, they should be sandwiched back together with curd generously.
The next step is to arrange the buns in the dish.
Milk, egg, remaining curd and cream should be whisked together.
Now, you need to sieve them into a jug.
3 tablespoons of sugar and vanilla must be added.
Then, it should be pored over the buns.
Now, you have to keep them at room temperature for 30 minutes. (It is being done to allow the custard to soak in).
It is the time to heat the oven to 160C/fan 140C/gas 3.
The remaining sugar and lemon zest should be scattered over the pudding.
It should be baked for 30 to 40 minutes until the top becomes golden. (You also need to make sure that the custards sets in gently).
Stand for 5 minutes.
The dish is ready to serve and it can be served with vanilla ice cream or cream.
- Stale hot cross bun – 4 nos.
- Double cream – 200 ml.
- Butter – A walnut-sized lump.
- Large egg – 2 nos.
- Lemon zest – A little.
- Milk – 200 ml.
- Caster sugar – 4 tablespoons.
- Vanilla extract – 1/2 teaspoon.
- Cream or vanilla ice cream – To serve. (Optional).
- Lemon curd – 2 grams.
