One-pan salmon with roast asparagus

Heat oven to 220C/fan 200C/gas 7.

Pour one tablespoon of olive oil.
The potatoes need to be tipped
Put them in the ovenproof dish.
The potatoes should be roasted for 15 minutes until they turn brown.
The asparagus need to be tossed in with the potatoes.
Then, return to the oven for 15 minutes.
The next step is to throw the cherry tomatoes.
Now, you have to nestle the salmon amongst the vegetables.
Drizzle with the remaining one tablespoon of olive oil.
Return to the oven for 10-15 minutes. (You have to make sure that the salmon is cooked).
The basil leaves need to be scattered over.
The dish is ready to serve.
You can serve everything scooped straight from the dish. Some people top it with lemon juice and lemon wedges can be used to garnish as well.

- Trimmed and halved asparagus spears – 8 nos.
- Cherry tomato – 2 handfuls.
- Salmon fillet – 2 (140 grams/5 oz each)
- Balsamic vinegar – 1 tablespoon.
- Basil leaves – handful.
