This wonderful recipe is our idea of perfect veggie and the potatoes available in this recipe take control of the spicy flavors in a beautiful manner. The oil should be heated in a large pan.

When the oil becomes hot, the garlic and onion need to be cooked for 3 to 4 minutes until they become soft. It is always advisable to stir them occasionally and extreme importance should be given to keeping the heat confined to medium level.

Then, you need to add carrots, potatoes and parsnips.

The heat should be turned up and you have to cook these items for 6 to 7 minutes.

Stir well until the color of the vegetables becomes gold.

Then, you have to add the curry powder and paste.

The next step is to pour in the stock before bringing to the boil.

The heat should be reduced before adding the lentils.

Then, you need to cover and simmer for 15 to 20 minutes to make the vegetables and lentils become tender.

Also make sure that the sauce has thickened during this time. (Within the same 15 to 20 minutes).

Most part of the coriander should be added and stir well.

Season and heat for around I minute.

The next step is to top with yogurt.

Add the remaining coriander.

This dish can be served with naan bread to make it more endearing to the guests.

Ingredients

  • Vegetable or sunflower oil – 2 tablespoons.
  • Crushed garlic clove – 2 nos.
  • Chopped onion – 1 no.
  • Potatoes; peeled and cut into chunks – 700 grams.
  • Thickly sized carrot – 4 nos.
  • Thickly sized parsnip – 2 nos.
  • Curry powder or paste – 2 tablespoons.
  • Vegetable stock - 1 liter or 1-3/4 pints.
  • Red lentils – 100 grams.
  • Roughly chopped fresh coriander – a small bunch.
  • Naan bread – to serve.
  • Low-fat yogurt – to serve.
