Ingredients

  • 3 cups shredded hash brown potatoes

  • cup butter, melted

  • seasoning salt to taste

  • 1 cup diced cooked ham

  • 1 cup shredded Cheddar cheese

  • ¼ cup chopped onion

  • 2 large eggs

  • ½ cup milk

  • salt and pepper to taste

Directions

Hash Brown Crusted Quiche
  1. Preheat the oven to 425 degrees F (220 degrees C).

  2. Press hash brown potatoes onto the bottom and sides of a 9-inch pie dish. Drizzle with melted butter and sprinkle with seasoning salt.

  3. Bake in the preheated oven until potatoes begin to brown, about 20 minutes.

  4. Combine ham, cheese, and onion in a small bowl. Whisk together eggs, milk, salt, pepper, and a little seasoning salt in a separate bowl.

  5. When crust is ready, spread ham mixture on the bottom, then cover with egg mixture.

  6. Reduce oven temperature to 350 degrees F (175 degrees C.) Bake in the preheated oven until filling is puffed and golden brown, 20 to 25 minutes.

Recipe Tip

You can bake this quiche and refrigerate it up to 2 days in advance, then reheat it in the microwave. It also freezes well.
