Bring water and pineapple to a boil in a medium saucepan. Stir in sugar mixture and mix well. Cook over medium heat until thickened; stir constantly. Stir in butter, lemon juice and lemon zest to saucepan. Then spoon entire mixture into pie shell. Cover and refrigerate pie until ready to be served.
