Ingredients

  • 1 cup Hellmann's® or Best Foods® Real Mayonnaise

  • 2 tablespoons lime juice

  • 2 tablespoons chopped fresh cilantro

  • 2 cloves garlic, finely chopped

  • 1 teaspoon ground chipotle chile pepper

  • 2 pounds boneless, skinless chicken thighs, cubed OR boneless, skinless chicken breasts, cut into thin strips

Directions

  1. In medium bowl, combine all ingredients except chicken; reserve 1/2 cup mayonnaise mixture.

  2. On skewers*, thread chicken, then brush with remaining mayonnaise mixture.

  3. Grill or broil chicken, turning once, 8 minutes or until chicken is thoroughly cooked. Serve chicken skewers with reserved mayonnaise mixture.

Tips

Makes 8 main-dish or 32 appetizer servings.

TIP: Recipe can be halved.

*If using wooden skewers, soak in water at least 15 minutes prior to use.

You can substitute 1 chopped chipotle pepper in adobo sauce for 1 teaspoon ground chipotle chile pepper.
