Turnip Green Soup

This turnip green soup recipe was given to me by my aunt. I'd never heard of it before, but it's a really good mixture of turnip greens, great northern beans, kielbasa sausage, and seasonings. Try it with cornbread on the side.

Ingredients

  • 1 teaspoon vegetable oil

  • 1 pound kielbasa sausage, cut into 1 inch pieces

  • 1 medium onion, chopped

  • 5 cups chicken broth

  • 2 (27 ounce) cans turnip greens, drained

  • 2 (14.5 ounce) cans great northern beans, rinsed and drained

  • 1 package vegetable soup mix (such as Knorr's®)

  • 1 teaspoon hot pepper sauce (such as Tabasco®)

  • 1 teaspoon garlic powder

  • 1 pinch Creole seasoning (such as Tony Chachere's®), or to taste

  • salt and ground black pepper to taste

Directions

  1. Heat oil in a large saucepan over medium heat. Add kielbasa and onion; cook and stir until kielbasa is browned and onion is translucent, 5 to 7 minutes. Remove to a plate.

  2. Add broth, turnip greens, beans, soup mix, hot pepper sauce, garlic powder, Creole seasoning, salt, and pepper to the saucepan; bring to a boil over medium-high heat.

  3. Return kielbasa and onion mixture to the saucepan. Reduce the heat to medium-low and simmer for 2 hours.

Recipe Tip

Sometimes, I prepare Steps 2 and 3 in a slow cooker on Low for 4 to 5 hours.
