Spinach and Garlic Scape Pesto

This is a great way to use garlic scapes - the curly green tops of garlic that you can get from the farm early in the growing season! The spinach cuts down some of the super-strong garlic flavor. Use as a sauce for hot pasta, a spread for sandwiches, mixed with mayo for a spread or dip, mixed with ranch dressing for salad. The possibilities are endless!

Ingredients

  • 4 cups fresh spinach

  • 1 pound garlic scapes, minced

  • 1 ½ cups Parmesan cheese

  • 1 ½ cups olive oil

  • 2 tablespoons pine nuts, or to taste

  • salt and ground black pepper to taste

Directions

  1. Blend spinach, garlic scapes, Parmesan cheese, olive oil, and pine nuts in a food processor until smooth; season with salt and pepper.

Cook's Note:

Extra pesto can be frozen in ice cube trays for future use.
