These moreish cheese bread bites are a favorite in Brazil and just happen to be gluten-free. Easy and delicious! Serve warm.

Ingredients

  • 1 ¼ cups milk

  • ½ cup vegetable oil

  • 2 tablespoons vegetable oil

  • 1 ½ teaspoons salt

  • 4 cups tapioca flour

  • 2 eggs

  • 2 cups grated Parmesan cheese

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a baking sheet.

  2. Combine milk, 1/2 cup plus 2 tablespoons oil, and salt together in a saucepan; bring to a boil. Add tapioca flour; stir constantly until dough easily pulls away from the sides of the pan. Remove from the heat; cool 10 to 15 minutes. Stir in eggs, one at a time. Mix in Parmesan cheese.

  3. Shape the dough into small balls with greased hands; place onto baking sheet a few inches apart.

  4. Bake in the preheated oven until puffed and golden, about 25 minutes.

Cook's Note:

To keep these delicious morsels gluten-free, use tapioca flour to dust the baking tray.
