Quick and Easy Strawberry Cream Cheese Frosting

I needed an easy strawberry frosting to frost my daughter's birthday cake. I used the same cream cheese frosting recipe my mom used to make for my cakes when I was a kid and just tossed in the gelatin. This works well for frosting or as a filler between cake layers. Keep refrigerated.

Ingredients

  • 2 (8 ounce) packages cream cheese, softened

  • 1 ½ cups confectioners' sugar

  • ½ cup butter, softened

  • 1 (3 ounce) package strawberry-flavored gelatin (such as Jell-O®)

  • ¼ cup milk

  • 1 teaspoon vanilla extract

Directions

  1. Combine cream cheese, confectioners' sugar, butter, gelatin, milk, and vanilla extract in a bowl using an electric mixer on low speed. Continue to mix, pausing to scrap sides down as needed, until frosting is evenly mixed and fluffy.

Cook's Note:

Adjust milk for desired consistency (ie. more milk for thinner frosting).
