Ingredients

  • 1-1/2 pounds beef stew meat
  • 1-1/2 pounds potatoes (about 3 medium), peeled and cut into 1-inch cubes
  • 1 can (14-1/2 ounces) diced tomatoes, undrained
  • 1 can (14-1/2 ounces) beef broth
  • 2-1/2 cups fresh baby carrots (about 12 ounces)
  • 1 large tomato, chopped
  • 1 medium onion, chopped
  • 2 tablespoons taco seasoning
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water

Directions

  1. In a 5- or 6-qt. slow cooker, combine first 10 ingredients. Cook, covered, on low 7-9 hours or until beef and vegetables are tender.
  2. In a small bowl, mix cornstarch and water until smooth; gradually stir into stew. Cook, covered, on high 30-45 minutes longer or until stew is slightly thickened.
