Ingredients

  • 2 oz. candied lemon peel
  • 4 oz. raisins
  • 1 cup of milk
  • 2 tbsp. lemon marmalade
  • 6 oz. margarine
  • 4 oz. caster sugar
  • 1 lb. self raising flour.

Method

  • STEP 1
    Preheat oven. Chop lemon peel into small pieces. Sieve flour, rub in magarine and dry ingredients.
  • STEP 2
    Stir marmalade into milk and mix, add dry ingredients and mix thoroughly.
  • STEP 3
    Put into baking tin and cook in a medium preheated oven for about one and a half hours.
  • STEP 4
    Put onto wire rack to cool.
