Ingredients
- 1 medium onion
- 4 rashers of bacon
- 75 grams risotto rice per person
- 2 or 3 vegetable stock cubes
- tinned chopped tomatoes
Method
- STEP 1Chop and fry the onions and bacon together with some olive oil
- STEP 2Add the risotto rice to the onion and bacon mixture, and cook until it's clear
- STEP 3Add two or three stock cubes to the rice, bacon and onions and add 3/4 of a pint of boiling water for each stock cube you've added
- STEP 4Add the chopped tomatoes, stir
- STEP 5Serve!
