Ingredients

  • 8oz self-raising flour,sifted
  • 8oz caster sugar(or vanilla sugar)
  • 8oz unsalted butter,at room temperature
  • 1tsp baking powder
  • 1tsp vanilla extract
  • 4 eggs(free range or organic)
  • 2 cupcake or muffin pans lined with 15 cupcake cases

Method

  • STEP 1
    Preheat oven to 180'c
  • STEP 2
    Combine all ingredients in a bowl with an electric mixed until well combined.
  • STEP 3
    Spoon into cases and bake for about 20 minutes or until golden brown and well risen.
  • STEP 4
    Cool on wire rack and then ice with chosen topping. Enjoy!
