White Bean Spread

Leave the store-bought hummus on the shelves and prepare a batch of this super-simple slow cooker bean dip instead. Spread the finished product on sandwiches or serve with pita chips and vegetables for a healthyappetizer.

Ingredients

  • 2 15 ounce cans Great Northern beans or cannellini beans (white kidney beans), rinsed and drained

  • ½ cup chicken broth or vegetable broth

  • 1 tablespoon olive oil

  • 3 cloves garlic, minced

  • 1 teaspoon snipped fresh rosemary

  • teaspoon lemon-pepper seasoning (optional)

  • Assorted vegetables, multigrain snack chips, and/or toasted bagel chips

Directions

  1. In a 1-1/2-quart slow cooker combine beans, broth, oil, garlic, rosemary, and, if desired, lemon-pepper seasoning.

  2. Cover and cook on low-heat setting for 3 to 4 hours.

  3. Slightly mash beans with a potato masher. Transfer bean spread to a serving bowl. Serve warm or at room temperature with vegetables and/or chips.

To Make Ahead:

Prepare as directed. Transfer bean spread to an airtight container; cover. Chill for up to 24 hours. Bring to room temperature before serving.
