Ingredients

  • ½ cup butter

  • 2 cup sugar

  • cup evaporated milk

  • ¼ cup canned pumpkin

  • 1 teaspoon pumpkin pie spice

  • ¼ teaspoon salt

  • 2 cup tiny marshmallows

  • 1 cup white chocolate chips

  • ½ cup chopped pecans, toasted

  • ½ teaspoon vanilla

Directions

  1. Line an 8x8-inch pan with foil, extending foil over edges of the pan. Butter the foil.

  2. Place butter in a large bowl. Microwave, uncovered, 45 to 60 seconds or until melted. Stir in sugar, evaporated milk, pumpkin, pumpkin pie spice, and salt. Microwave, uncovered, 8 minutes, stirring every 3 minutes.

  3. Carefully remove bowl from microwave. Add marshmallows, white chocolate chips, pecans, and vanilla. Stir until well combined and marshmallows and chocolate are melted. Quickly spread fudge evenly in prepared pan. While warm, score fudge into 1-inch squares. Cool to room temperature, then chill 1 to 2 hours or until firm. Use foil to lift uncut fudge out of pan; cut into squares. Cover and store in the refrigerator. Bring to room temperature before serving.
