Ingredients

  • 1 lime

  • 1 pound ground pork or lamb

  • 5 slices bacon, coarsely chopped

  • ¼ cup reduced-sodium soy sauce

  • 1 ½ tablespoon Thai Hot Pepper Spice Mix

  • 1 large shallot, chopped

  • 3 tablespoon chopped fresh cilantro and/or fresh mint

  • 2 tablespoon chopped lemongrass

  • 1 tablespoon grated fresh ginger

  • 3 cloves garlic, chopped

  • 2 tablespoon light mayonnaise

  • 2 teaspoon Asian chili sauce (Sriracha)

  • 1 ½ cup shredded cabbage with carrot (coleslaw mix)

  • 4 sesame hamburger buns, split and toasted

Thai Hot Pepper Spice Mix

  • 10 teaspoon paprika

  • 2 teaspoon ground corriander

  • 2 teaspoon ground cumin

  • 2 teaspoon ground ginger

  • 2 teaspoon onion powder

  • ½ teaspoon cayenne pepper

Directions

  1. Finely shred lime peel (reserve lime). In a large bowl combine the lime peel, pork, bacon, soy sauce, 1 tablespoon of the Thai Hot Spice, shallot, cilantro, lemongrass, ginger, and garlic. Mix well to combine. Form into 4 patties, 3/4- to 1-inch thick.

  2. For a charcoal or gas grill, place the patties on the grill rack of a covered grill directly over medium heat. Grill for 10 to 12 minutes or until an instant-read thermometer inserted in burgers registers 160°F. (Or, preheat broiler. Place patties on the unheated rack of a broiler pan. Broil 5 inches from the heat for 10 to 12 minutes or until done (160°F.).

  3. Squeeze juice of half of a lime into a small bowl. Add mayonnaise, chile sauce, and remaining spice mix. Stir to combine. Add coleslaw. Toss to combine.

  4. Serve burgers on buns topped with slaw mixture.

Thai Hot Pepper Spice Mix

  1. Shake everything together in a small jar, cover and store in a cool, dark place for up to 6 months.

To make chopping lemongrass easier, try smashing it with a mallet or rolling pin first.
