Ingredients

  • ½ cup butter, softened

  • cup packed brown sugar

  • ½ teaspoon baking powder

  • ¼ teaspoon baking soda

  • ¼ teaspoon salt

  • 2 eggs

  • ½ teaspoon vanilla

  • 1 cup whole wheat flour

  • 1 cup rolled oats

  • 1 ¼ cup dried mixed fruit bits, snipping any large pieces; dried cranberries or cherries; raisins; or snipped dried apricots

  • ¾ cup chopped walnuts, peanuts, pecans, or almonds

Directions

  1. In a large mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Add brown sugar, baking powder, baking soda, and salt. Beat on medium speed until combined, scraping the sides of bowl occasionally. Beat in eggs and vanilla until combined.

  2. Beat in as much flour as you can with the mixer. Stir in any remaining flour with a wooden spoon. Stir in oats, mixed fruit bits, and nuts.

  3. Drop dough by rounded teaspoons 2 inches apart onto a greased cookie sheet.

  4. Bake in a 350° degree F oven for 10 to 12 minutes or until edges are lightly browned. Let cookies stand on cookie sheet for 1 minute. Transfer cookies to a wire rack; let cool. Makes about 3 dozen cookies.
