Cherry-White Chocolate Chip Cookies

Maraschino cherries add a sweet blush to these white chocolate chip cookies. Try to remove as much moisture from the cherries as you can by placing them between paper towels and pressing gently. Dip cookies in melted white chocolate for an extra pretty presentation.

Ingredients

  • ½ cup shortening

  • ½ cup butter, softened

  • 1 ½ cup granulated sugar

  • 1 teaspoon baking soda

  • 1 teaspoon kosher salt

  • 2 eggs

  • 2 tablespoon maraschino cherry juice

  • Pink food coloring (optional)

  • 2 ¾ cup all-purpose flour

  • 4 ounce white baking chocolate, chopped

  • ½ cup chopped stemmed maraschino cherries, patted dry

  • 4 ounce white baking chocolate with cocoa, chopped (optional)

  • 1 tablespoon shortening (optional)

Directions

  1. Preheat oven to 375°F. In a large bowl beat shortening and butter with a mixer on medium 30 seconds. Add sugar, baking soda, and salt. Beat on medium 2 minutes, scraping bowl as needed. Beat in eggs, cherry juice, and food coloring (if using) until combined. Beat in flour. Stir in 4 oz. white chocolate and the chopped cherries.

  2. Drop dough by rounded teaspoons 2 inches apart onto ungreased cookie sheets. Bake 6 to 8 minutes or until just starting to turn brown. Cool on cookie sheets 2 minutes. Remove; cool on wire racks.

  3. If desired, in a bowl microwave 4 oz. white chocolate with cocoa and shortening in 30-second intervals until melted, stirring until smooth. Dip cookies partway into melted chocolate, let excess drip off, and place on wire racks over waxed paper. Let set.
