Grilled Pork and Peach Tacos

Ingredients

  • 3 tablespoon honey

  • 3 canned chipotle peppers in adobo sauce

  • 2 cloves garlic, peeled

  • 3 tablespoon olive oil

  • ½ teaspoon salt

  • ½ teaspoon chili powder

  • ½ teaspoon ground cumin

  • ¼ teaspoon black pepper

  • 1 1-1.5 pound pork tenderloin

  • 4 ripe peaches, halved and pitted

  • Canola oil

  • 8 6 inch corn tortillas, warmed

  • Toppings such as sour cream or crema, lime wedges, and/or cilantro

Directions

  1. In a small food processor, combine first 8 ingredients (through the pepper) and process until smooth. Transfer chipotle mixture and pork tenderloin to a one-gallon-size resealable plastic bag, turning to coat. Seal and chill 2 to 24 hours to marinate. Remove pork; discard remaining marinade.

  2. Grill pork on the rack of a covered grill using indirect medium heat 30 to 35 minutes or until done (145°F). Lightly brush peaches with canola oil; grill cut sides down, directly over heat, 2 to 3 minutes or until lightly charred. Thinly slice pork and chop peaches. Serve in corn tortillas and top with desired toppings.
