Grilled Potato Slices

Grilling potatoes gives them a slightly sweet flavor and it frees up the oven and stovetop for other dishes, making this a wonderful side or appetizer for a crowd.

Ingredients

  • 1 ⅓ pound russet potatoes, red-skin potatoes, and/or sweet potatoes

  • 2 tablespoon olive oil

  • Coarse salt

  • Cracked black pepper

  • 3 tablespoon snipped oil-packed dried tomatoes

  • 2 tablespoon drained capers

  • ½ cup purchased crème fraîche

  • 1 tablespoon snipped fresh chives

Creme Fraiche

  • ¼ cup whipping cream (not ultrapasteurized)

  • ¼ cup dairy sour cream

Directions

  1. Scrub potatoes. Cut potatoes into 1/2-inch slices. Brush both sides of each potato slice with oil. Sprinkle with salt and pepper.

  2. For a charcoal or gas grill, place potato slices on ta grill rack directly over medium heat. Grill for 15 to 20 minutes or until potatoes are tender and browned, turning once.

  3. Arrange potato slices on a serving platter. Sprinkle with dried tomatoes and capers. Spoon crème fraîche into a small serving bowl; sprinkle with chives. Serve potato slices warm or at room temperature with crème fraîche.

Creme Fraiche

  1. In a small bowl stir together whipping cream and sour cream. Cover with plastic wrap. Let stand at room temperature for 2 to 5 hours or until mixture thickens. When thickened, cover and chill in the refrigerator until serving time. Stir before serving.

Some potatoes work better than others for grilling. Choose large, round red-skin potatoes; large yellow-flesh potatoes; russet potatoes; and/or large sweet potatoes. For pretty presentation (and the most flavor) choose more than one variety.
