Ingredients

  • 3 heads baby bok choy, trimmed and thinly sliced

  • 2 cup shredded red cabbage

  • ½ of a fresh pineapple, peeled, cored, and chopped (2 cups)

  • 2 tablespoon cider vinegar

  • 4 teaspoon packed brown sugar

  • 2 teaspoon Jamaican jerk seasoning

  • 1 tablespoon vegetable or canola oil

  • 4 skinless, boneless chicken breast halves

Directions

  1. For pineapple slaw: In an extra-large bowl combine bok choy, cabbage, and pineapple. In a small bowl stir together vinegar and 2 teaspoons of the brown sugar. Drizzle over bok choy mixture; toss to coat.

  2. In a small bowl combine remaining 2 teaspoons brown sugar and the jerk seasoning. Rub on chicken.

  3. Grill on the rack of a covered grill directly over medium heat 8 to 12 minutes or until chicken is done (165°F), turning once. Transfer to a cutting board and slice. Serve chicken with pineapple slaw.
