Yield:
4 cups brussels sprouts

Ingredients

  • Olive oil cooking spray

  • 2 tablespoon maple syrup

  • 2 tablespoon bourbon or apple cider

  • 1 tablespoon reduced-sodium soy sauce

  • 2 teaspoon Dijon mustard

  • 3 cloves garlic, minced

  • ½ teaspoon salt

  • ½ teaspoon ground ancho chile pepper or chili powder

  • ¼ teaspoon black pepper

  • 1 ½ pound Brussels sprouts, trimmed and halved

  • cup chopped pecans, toasted*

Directions

  1. Coat air-fryer basket with cooking spray. Preheat air fryer at 400°F. In a large bowl whisk together next 8 ingredients (through black pepper). Add Brussels sprouts; toss to coat.

  2. Working in batches, if necessary, arrange Brussels sprouts in a single layer in air-fryer basket (do not overcrowd). Cook 5 minutes; shake basket. Cook 5 to 7 minutes more or until sprouts are tender and deep golden brown. If cooking in batches, return all sprouts to air-fryer basket and cook 1 minute more to heat through.

  3. Top Brussels sprouts with pecans and, if you like, drizzle with additional maple syrup.

Toasting Pecans

Toast the pecans in the air fryer at 400°F for 3 minutes.
