This is without a doubt the best salad I've ever had or made! Everyone who tastes it raves about it and wants the recipe. I use tiny red, white and blue potatoes, more basil and more cheese (crumbled) and only about a handful of arugula.
I used fresh corn, grilled on the grill. Omitted the arugula and crumbled the goat cheese. Great side!
Our vegan neighbors LOVE this salad and they are "foodies." I just eliminate the cheese for them and add it for other guests.
I used corn since fresh isn't locally available yet. I left out the cheese altogether so my vegan sister could eat this, and since I was also serving a mixed greens tossed salad didn't add arugula either. Excellent switch from routine potato salad, and beautiful to look at. Went well with steamed lobsters and steaks for the 4th. Everyone liked it. Will definitely make again.
Fabulous salad! I substituted Spring Mix for the Arugula and Feta for the Goat Cheese. Will definitely make again!

This is a great salad to serve alone or with grilled fish, chicken or whatever. It's delicious!
This salad was fantanstic! I used fresh mozzarella instead of the goat cheese but otherwise made the recipe as is. The peppery arugala with the fresh corn, tomatoes and basil is a great summer combination. And the dressing was wonderful. The white balsamic adds a nice sweetness to it. It makes a lot. More than you need as a side salad. Although, my husband finished the whole platter!
Made as a side for burgers rather than main dish, so served half-portions. Subbed mixed baby greens for the arugula, otherwise followed directions. Vibrant, fresh, and sweet. A very nice change from slaws or potato salads.

Very tasty & easy to put together since I cooked & chilled the potatoes in the a.m. Served with grilled tenderloin steaks & garlic bread to company over Labor Day weekend; some had never tried arugula before. They loved it!
While I didn't have fresh basil or goat cheese available, the salad was excellent using dried basil & monterey jack as substitutes. Suitable for company, but easy enough to prepare quickly after a long day of work. If you have pre-cooked red potatoes on hand, the recipe takes even less time. Easy to make!
Very tasty! Briefly cooked the fresh corn in skillet with tiny bit of butter, salt and pepper - we all liked the corn slightly warm in the salad. Used ricotta salata instead of goat cheese. Basil and cherry tomatoes from the garden.
The freshness in this salad is the key! Use fresh corn and fresh basil (not dried!). I used grape tomatoes and 1.5 lbs of butter potatoes. I was worried that the potatoes would be too much, but I found it was a nice change in texture from the corn and the potatoes. Quite good, and I would make this for guests!
Absolutely incredible. I am not much of a tomato fan but these tomatoes complimented the entirety of the dish making each bite wonderful. I paired this with a grilled steak and it ended up being a really nice pairing. This one will become a staple in the household.
This salad is sooo easy to make- and tastes amazing. I made it for dinner last night with corn, peppers and tomatos from the garden. My DH LOVED it! We will make it again next week, for sure. A great way to use your fresh veggies. It's light but filling. I skipped the basil and only put in 2.5 cups of arugula. We had plenty left over, even after DH had 3 servings!
The family loved this - picky husband and 4 yr old. I added some grilled chicken, but perfect and delicious as is!! This will become a staple - really easy and so tasty!
