I had this in Brazil where it's called Milho Verde or green corn ice cream. it was smooth and creamy and wonderful. I would puree the corn first hoping the result would not have chunks of the kernels in the ice cream.
My fiance actually made this, and I'm pretty sure he stuck to the recipe. He said that when the ice cream was finished churning, it tasted like a vanilla pudding. Now that it's been in the freezer hardening over the last few days, it definitely tastes more of corn (albeit a light flavoring), and it has a very creamy taste.
