Ingredients

  • 1 tablespoon Caribbean jerk seasoning
  • 1 lb. fresh or frozen turkey tenderloins, thawed
  • 2 tablespoons brown sugar
  • 1 tablespoon lime juice
  • 1 tablespoon water
  • 2 small firm bananas, diagonally sliced

    GRILL DIRECTIONS: Heat grill. Rub jerk seasoning onto both sides of turkey tenderloins.

    When ready to grill, place turkey on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals; cover grill. Cook 10 to 15 minutes or until turkey is fork tender and juices run clear, turning once.

    Meanwhile, in medium skillet over medium-low heat, combine brown sugar, lime juice and water; mix well. Add bananas; cook 3 to 4 minutes or until bananas are warm.

    To serve, cut turkey into slices. Serve bananas with turkey.

    Red chiles, thyme and allspice give Caribbean jerk seasoning its sweet and spicy flavor. Look for the mixture, also called Jamaican jerk seasoning, in the spice section of the supermarket.

    Try using 1 plantain in place of the bananas. A large firm variety of banana often called the cooking banana, plantains have a mild, less-sweet banana flavor that is a good match for hot and spicy foods. Cook the plantain 1 to 3 minutes longer than stated cooking times, or until tender.

    Complete the meal with cooked white rice sprinkled with diced bell pepper.
