Bean and Cheese Hand Pies

Great meatless pie that can be hand-held or served on a plate with salsa!

Ingredients

  • 1 can (11 oz) refrigerated Pillsbury™ Thin Crust Pizza Crust
  • 1 1/3 cups from 1 can (16 oz) Old El Paso™ Traditional Refried Beans, stirred
  • 1/4 cup salsa
  • 1/2 cup shredded mozzarella or Mexican cheese blend (2 oz)
  • Additional salsa, if desired

    Heat oven to 400°F. Unroll dough onto ungreased large dark or nonstick cookie sheet. Starting at center, press out dough into 14x10-inch rectangle; cut into 4 (7x5-inch) rectangles.

    Spread 1/3 cup refried beans on half of each rectangle to within 1/2 inch of edges. Top beans on each with 1 tablespoon salsa and 2 tablespoons cheese. Fold dough in half over filling; press edges firmly with fork to seal. Prick tops with fork to vent.

    Bake 8 to 10 minutes or until golden brown. Serve topped with additional salsa.
