Courgette and Parmesan Soup

Ingredients
- 1 large onion, chopped
- 2 gloves garlic, sliced
- 1 tbsp olive oil
- 2 medium courgettes, diced
- 700 ml vegetable stock
- 100g grated parmesan
Method
- STEP 1in a large pot sweat the chopped onion and sliced garlic in the olive oil until golden
- STEP 2add the courgettes and stock, bring to the boil and simmer for 15-20 minutes
- STEP 3blend the soup until smooth, then add the parmesan and blend again
- STEP 4serve immediately with fresh crusty bread
