Fig, parma & mozzarella salad

Ingredients
- 4 fresh ripe figs
- 2 large handfuls of baby spinach and watercress
- 125g buffalo mozzarella
- 4-6 slices of parma ham
- 1 ripe pear *optional
- 2 tbsp extra virgin olive oil
- 2 tbsp white balsamic vinegar
- 1 tbsp acacia honey
- A little salt and black pepper
Method
- STEP 1Place the spinach and watercress in a large salad bowl
- STEP 2Cut each fig into six segments and add
- STEP 3Tear and add the mozzarella
- STEP 4Tear and add the parma ham
- STEP 5Cut the pear into slivers and add
- STEP 6Dress with the oil, vinegar, honey and seasoning
