Multi-veg, beef pasta bake

Ingredients
- 1 tbsp vegetable oil
- 1 medium onion
- 1 can of chopped tomatoes
- 100g minced beef
- 1 basil leaf
- 1 tbsp tomato puree
- 1/2 tbsp sugar
- salt and pepper to season
- 50g mushroom
- 50g celery
- 50g carrot
- 1 tsp chilli flakes
- 120g pre shaped (but uncooked) pasta
- 50g grated mozzarella
Method
- STEP 1finely chop the onion
- STEP 2Heat the vegetable oil in a saucepan. Add the onion and the minced beef and fry gently for 5 minutes
- STEP 3Add the can of tomatoes, tomato puree, sugar,seasoning, mushrooms, celery, carrot and chilli flakes
- STEP 4Simmer gently, uncovered, for about 15 minutes stirring occasionally
- STEP 5Add the pasta shapes to a saucepan with boiling water and a pinch of salt, and boil stirring all the time
- STEP 6When the pasta is soft, drain the water out and then add to the sauce and mix
- STEP 7Pour the pasta and sauce into an oven dish and sprinkle the mozzarella evenly over the top
- STEP 8Lightly grill in an oven,for 5 minutes
