Ingredients

Meatloaf

  • 1 lb. lean ground beef
  • 1/2 lb. lean ground pork
  • 1/2 cup Progresso™ Plain Bread Crumbs
  • 1/4 cup finely chopped onion
  • 1/4 cup chopped fresh parsley
  • 1/2 cup barbecue sauce
  • 2 eggs, beaten

Topping

  • 1/2 cup barbecue sauce
  • 1/2 teaspoon dry mustard

    Heat oven to 350°F. In large bowl, combine all meatloaf ingredients; mix until well blended. Press firmly in ungreased 8x4-inch loaf pan. Bake at 350°F. for 50 minutes.

    Meanwhile, in small bowl, combine topping ingredients; mix well. Set aside.

    Remove meatloaf from oven; spread 1/4 cup topping over loaf. Return to oven; bake an additional 20 to 30 minutes or until meat thermometer reaches 160°F. and meat is thoroughly cooked in center. Let stand 5 to 10 minutes before serving. Serve with additional topping.

    Choose your favorite barbecue sauce to use in this recipe; any of the various brands and flavors will work.

    Prepare the meatloaf up to one day in advance. Cover tightly and refrigerate. To bake, uncover and bake it as directed in the recipe, adding 10 to 15 minutes to the baking time.

    Mashed potatoes are a natural next to meatloaf, but boiled new potatoes also complement this recipe. Broccoli spears and cinnamon applesauce will complete this meal.
