What is a quiche?

Want to elevate your usual breakfast or brunch? There’s nothing quite as special as quiche! A quiche is an open French tart made with flaky pastry crust that’s filled with a savory egg custard, often with additions of cheese, meat and vegetables inside. This easy quiche recipe uses Pillsbury™ Pie Crust for a shortcut to deliciousness — and what could be tastier than add-ins of smoky bacon and ooey, gooey cheese? Yum!

How should I store quiche?

We’d be surprised if you end up with leftovers, but don’t you worry — any extra quiche can easily be refrigerated and enjoyed at a later date.

To store in the refrigerator: Cut the quiche into 8 slices and wrap each slice individually in foil. Refrigerate for up to 4 days. Reheat individual portions (in foil) in a 325°F oven for 15 to 20 minutes, until heated through (at least 165°F in center).

You can also freeze quiche, but it runs the risk of separating. If you’re freezing a whole quiche, wrap it in two layers of plastic. Label and date the packaging — it will keep well in the freezer for up to 2 months.

To freeze individual portions, cut the quiche into 8 slices and arrange them on a rimmed baking sheet. Freeze them for at least 4 hours or until firm. Wrap each frozen slice in plastic and place the slices in a resealable plastic bag. Label and date the packaging, and freeze your quiche slices for up to 2 months.

Ingredients

  • 1 crust from 1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count), softened as directed on box
  • 1 cup half-and-half or milk
  • 4 eggs, slightly beaten
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 8 slices bacon, crisply cooked, crumbled (3/4 cup)
  • 1 cup shredded Swiss or cheddar cheese (4 oz)
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon chopped onion, if desired

Steps

  • 1
Heat oven to 350°F. Place pie crust in 9-inch glass pie plate as directed on box for One-Crust Filled Pie.
  • 2
In medium bowl, mix half-and-half, eggs, salt and pepper; set aside. Layer bacon, cheeses and onion in crust-lined plate. Pour egg mixture over top.
  • 3
Bake 40 to 50 minutes or until knife inserted in center comes out clean. Let stand 5 minutes; cut into wedges.

Tips from the Pillsbury Kitchens

  • tip 1
One frozen Pillsbury™ Deep Dish Pie Crust may be substituted for the refrigerated Pillsbury™ Pie Crust in this quiche recipe. To use, place baking sheet on oven rack and heat oven as directed. Prepare filling and follow directions on package for One-Crust Filled Pie.
  • tip 2
Cut the bacon slices crosswise into 1/2-inch pieces, then cook them in a skillet until perfectly crisp. Set the bacon pieces on paper towels to soak up any grease before layering them in the pie plate.
  • tip 3
Use a wire whisk to beat the half-and-half in with the eggs after seasoning them. This is the most efficient way to blend the two together, creating a custard mixture that melds well with the other ingredients.

Frequently Asked Questions

What should I serve with quiche?

This quiche tastes delicious on its own, but we also love serving it alongside a fresh green salad or a side of oven-roasted potatoes for brunch.

There are plenty of topping options, too— try garnishing your quiche with a sprinkle of chopped green onion for a sharp bite. The flavor opportunities are endless!

Can I make this quiche ahead of time?

Whipping up this quiche for an event or gathering? We’ve got a shortcut for you. Just make the filling the night before, then assemble everything in the morning when you’re ready to bake it.

If you want to get a head start on the pie crust, too, you can form it in the pie plate, cover tightly with plastic wrap and refrigerate the night before as well. Then simply add the filling to the crust in the morning. Remember to stir the pre-assembled filling before adding to the crust.
